- Wash and trim the green beans. If they're particularly long, you can cut them in half for easier eating.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add the green beans and stir-fry for 4-5 minutes until they start to blister and become tender-crisp.
- Add the minced garlic (if using) and cook for another minute until fragrant.
- Pour in the soy sauce and rice vinegar, tossing to coat the green beans evenly. Cook for 1-2 more minutes until the sauce reduces slightly.
- Remove from heat and sprinkle with toasted sesame seeds. Serve immediately while hot.
Notes
Choose fresh green beans that are bright green and firm. Don't overcook - keep them crisp-tender. Toast raw sesame seeds for maximum flavor. Add red pepper flakes for heat or honey for sweetness.
