  1. Heat the olive oil and butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 20-25 minutes. Sprinkle with sugar, thyme, salt, and pepper. Remove from heat and let cool.
  2. Preheat your oven to 375°F (190°C). Roll out the puff pastry on a lightly floured surface and transfer it to a baking sheet lined with parchment paper. If using, spread a thin layer of Dijon mustard over the pastry, leaving a 1-inch border.
  3. Spread the caramelized onions evenly over the puff pastry. Arrange the tomato slices on top of the onions, overlapping slightly. Sprinkle with grated Gruyère cheese if desired. Fold the edges of the pastry inward to create a rustic border.
  4. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are tender. Let the tart cool slightly before slicing and serving.

Choose ripe tomatoes for the best flavor. Pat the tomato slices dry with a paper towel before arranging them on the tart to prevent a soggy crust.
