  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  2. Prepare the zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
  3. Mix the dry ingredients: In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
  4. Combine the wet ingredients: In the same bowl, add the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Stir until the mixture is smooth and well combined.
  5. Add the zucchini: Fold the grated zucchini (and nuts, if using) into the batter until just combined. Be careful not to overmix.
