- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
- Prepare the zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
- Mix the dry ingredients: In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
- Combine the wet ingredients: In the same bowl, add the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Stir until the mixture is smooth and well combined.
- Add the zucchini: Fold the grated zucchini (and nuts, if using) into the batter until just combined. Be careful not to overmix.
- Bake the bread: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
