- Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
- While the pasta cooks, prepare the bruschetta mixture. In a large bowl, combine halved cherry tomatoes, fresh mozzarella, chopped basil, diced red onion, and minced garlic.
- Whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper in a small bowl to create the dressing.
- Add the cooled pasta to the bruschetta mixture and pour the dressing over everything. Toss gently to combine, ensuring all ingredients are evenly distributed.
- If using, sprinkle with Parmesan cheese and extra basil for garnish. Refrigerate for at least 30 minutes to allow flavors to meld together.
Notes
This salad gets better with time - prepare up to 24 hours in advance. Choose pasta shapes with nooks and crannies to hold dressing better. Use ripe, flavorful tomatoes and let dressing sit 10-15 minutes before mixing for garlic infusion.
