  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella pearls or cubed mozzarella
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
  2. While the pasta cooks, prepare the bruschetta mixture. In a large bowl, combine halved cherry tomatoes, fresh mozzarella, chopped basil, diced red onion, and minced garlic.
  3. Whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper in a small bowl to create the dressing.
  4. Add the cooled pasta to the bruschetta mixture and pour the dressing over everything. Toss gently to combine, ensuring all ingredients are evenly distributed.
  5. If using, sprinkle with Parmesan cheese and extra basil for garnish. Refrigerate for at least 30 minutes to allow flavors to meld together.

Notes

This salad gets better with time - prepare up to 24 hours in advance. Choose pasta shapes with nooks and crannies to hold dressing better. Use ripe, flavorful tomatoes and let dressing sit 10-15 minutes before mixing for garlic infusion.
