  • 1 cup long-grain white rice
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • Salt and black pepper to taste
  • 2 green onions, sliced for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. In the same skillet, add onion, bell peppers, and celery. Sauté until vegetables are softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, thyme, and cayenne pepper. Cook for 2 minutes to toast the rice and spices.
  4. Pour in chicken broth and bring to a boil. Return the sausage to the skillet, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat and let stand covered for 5 minutes. Fluff with a fork, garnish with green onions, and serve hot.

Notes

For the best results, use authentic Andouille sausage for that signature smoky flavor. Don't skip toasting the rice with the spices - this step builds incredible depth of flavor. If you prefer a creamier texture, stir in a tablespoon of butter at the end.
