  • 1/3 cup all-purpose flour
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for wine)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 package puff pastry or pie crust
  • 1 egg, beaten (for egg wash)

  1. Heat the olive oil in a large skillet over medium-high heat. Add the cubed beef and sear until browned on all sides. Remove the beef from the skillet and set it aside.
  2. In the same skillet, add the diced onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir to combine. Slowly pour in the beef broth and grape juice, stirring constantly to avoid lumps. Add the tomato paste, thyme, rosemary, salt, and pepper. Bring the mixture to a simmer and cook until it thickens.
  4. Return the seared beef to the skillet and stir to coat it in the gravy. Add the frozen peas and cook for an additional 5 minutes. Remove from heat and let the mixture cool slightly.
  5. Preheat your oven to 375°F (190°C). Transfer the beef and vegetable mixture to a pie dish. Roll out the puff pastry or pie crust and place it over the top of the dish. Trim any excess dough and crimp the edges to seal. Brush the top with the beaten egg for a golden finish.
  6. Bake the pot pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and flaky. Let it cool for a few minutes before serving.

Notes

Use cold butter for a flakier crust if making your own pastry. Sautéing the vegetables before adding them to the pie ensures they are tender and flavorful. Let the pot pie rest for 10 minutes after baking to set the filling. Customize the filling by adding mushrooms or potatoes for extra heartiness.
