- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes with an electric mixer)
- Beat in the eggs one at a time, then add the vanilla extract and mix until well combined
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt, then gradually add this dry mixture to the wet ingredients, mixing just until combined
- Stir in the rolled oats and any optional additions like raisins or chocolate chips
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart
- Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
Notes
For ultimate chewy texture, don't overbake - edges should be set but centers slightly underdone. Use old-fashioned rolled oats for better texture. Chilling dough for 30 minutes prevents excessive spreading. Brown sugar adds moisture for crispy edges and chewy centers.
