  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading on bread)

Method

  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. If using, lightly spread butter on one side of each slice of bread.
  3. Spread a generous layer of the herb cream cheese mixture onto the unbuttered side of each bread slice. Arrange the thinly sliced cucumbers evenly over the cream cheese on half of the bread slices. Top with the remaining bread slices, cream cheese side down.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a classic tea sandwich look. Cut each sandwich into quarters or halves, depending on your preference. Arrange on a serving platter and enjoy immediately.

Notes

Choose fresh, soft bread for the best texture. Pat cucumber slices dry to prevent sogginess. The cream cheese spread can be made ahead and stored in the refrigerator. Assemble sandwiches just before serving for freshness.
