  • 8 slices of soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional)

Method

  1. In a bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth and well combined.
  2. Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice. Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of each slice.
  3. Place the thinly sliced cucumbers evenly over the cream cheese on half of the bread slices. For extra crispiness, pat the cucumber slices dry with a paper towel before adding them.
  4. Top the cucumber-covered slices with the remaining bread slices, cream cheese side down. Press gently to secure the sandwiches.
  5. Using a sharp knife, trim off the crusts for a more elegant presentation. Cut each sandwich into small rectangles or triangles to create tea-time finger sandwiches. Arrange them on a platter and serve immediately.

Notes

Choose soft white or whole wheat bread for best results. Assemble sandwiches just before serving to prevent sogginess. For variety, add thin slices of avocado or fresh herbs like mint or chives. If preparing ahead, store the cream cheese spread and cucumber slices separately in the refrigerator.
