  1. Start by washing and thinly slicing the cucumber. For best results, use a mandoline or a sharp knife to ensure even slices. Place the slices on a paper towel to absorb any excess moisture.
  2. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Stir until smooth and well combined.
  3. Lay out the slices of bread and spread a thin layer of the cream cheese mixture on each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining bread slices, cream cheese side down.
  4. Using a sharp knife, trim the crusts off the sandwiches for a more elegant look. Cut each sandwich into quarters or smaller rectangles for dainty tea sandwiches. Garnish with fresh herbs if desired.

Notes

Choose soft bread like white or whole wheat for best results. To prevent sogginess, assemble the sandwiches just before serving. For a twist, add garlic powder or hot sauce to the cream cheese mixture.
