- Prepare the watermelon puree. In a blender, combine the cubed watermelon and blend until completely smooth. Strain through a fine-mesh sieve to remove any pulp, pressing with a spoon to extract all the juice. You should have about 2 cups of watermelon juice.
- Make the simple syrup. In a small saucepan, combine the sugar with 1 cup of water. Heat over medium heat, stirring constantly until the sugar completely dissolves. Remove from heat and add the mint leaves. Let it steep for 10-15 minutes to infuse the mint flavor.
- Strain the mint simple syrup through a fine-mesh sieve, pressing on the mint leaves to extract all the flavor. Discard the mint leaves.
- In a large pitcher, combine the watermelon juice, fresh lemon juice, mint simple syrup, and remaining 3 cups of cold water. Stir well to combine.
- Taste and adjust sweetness if needed. If you prefer a sweeter lemonade, add a bit more simple syrup. For a tarter flavor, add more lemon juice.
- Chill in the refrigerator for at least 1 hour before serving. Serve over ice with fresh mint sprigs and lemon slices for garnish.

Choose ripe watermelon for best flavor, use fresh lemon juice rather than bottled, muddle mint leaves for stronger flavor, can be made 24 hours ahead, makes about 2 quarts perfect for crowds
