  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons buttermilk
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried parsley
  • Salt and pepper to taste

  1. Prepare your breading station with three shallow bowls. Place flour in the first bowl, beaten eggs in the second, and mix panko, parmesan, garlic powder, Italian seasoning, paprika, and pepper in the third bowl.
  2. Dredge each zucchini stick in flour, shaking off excess. Dip in egg, then coat thoroughly in the panko-parmesan mixture, pressing gently to adhere.
  3. Arrange breaded zucchini fries in a single layer in your air fryer basket, leaving space between each piece. Lightly spray with olive oil.
  4. Air fry at 400°F for 8-10 minutes, flipping halfway through, until golden brown and crispy. Work in batches if needed.
  5. While fries are cooking, whisk together all ranch dip ingredients until smooth. Refrigerate until ready to serve.

Notes

Dry zucchini thoroughly before breading, don't overcrowd the air fryer basket, use freshly grated parmesan for better flavor, and serve immediately for maximum crispiness. The dip can be made 3 days ahead and zucchini can be breaded 2 hours ahead.
