- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Thinly slice the zucchinis and place them in a large bowl. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a separate bowl, combine the shredded cheddar, mozzarella, Parmesan, sour cream, parsley, garlic, salt, and pepper. Mix well.
- Arrange half of the zucchini slices in the prepared baking dish. Spread half of the cheese mixture evenly over the zucchini. Repeat with the remaining zucchini and cheese mixture.
- In a small bowl, mix the breadcrumbs with olive oil and paprika. Sprinkle this mixture evenly over the top of the casserole.
- Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
- Let the casserole cool for a few minutes before serving. Garnish with additional parsley if desired.
Notes
Use fresh, firm zucchinis for best results. Customize the cheese with options like Gruyère or Monterey Jack. Can be assembled ahead of time and refrigerated until ready to bake. For extra texture, add crushed crackers or nuts on top before baking.
