  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent. Add the diced bell peppers and cook for another 3-4 minutes until they begin to soften.
  3. Add the thinly sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp. Season with salt, pepper, oregano, and basil.
  4. In a separate bowl, combine the sour cream, mayonnaise, shredded cheddar cheese, and grated Parmesan cheese. Mix well until the ingredients are fully incorporated.
  5. Spread the sautéed vegetables evenly in the prepared baking dish. Pour the cheese sauce over the vegetables and spread it out evenly. Sprinkle the breadcrumbs on top for a crispy finish.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Let the casserole cool for a few minutes before serving. Garnish with fresh herbs if desired.
