- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface to a rectangle about 10x14 inches. Transfer the pastry to the prepared baking sheet.
- In a bowl, mix the ricotta cheese, grated Parmesan, egg, salt, and pepper until smooth. Spread the ricotta mixture evenly over the puff pastry, leaving a 1-inch border around the edges.
- Arrange the sliced heirloom tomatoes on top of the ricotta mixture. Sprinkle with chopped basil, minced garlic, and drizzle with olive oil.
- Fold the edges of the puff pastry inward to create a rustic border. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is set.
- Allow the tart to cool slightly before slicing. Serve warm or at room temperature, garnished with additional fresh basil if desired.
Notes
For the best flavor, use ripe, in-season heirloom tomatoes. Customize the cheese by mixing ricotta with goat cheese for a tangy twist. Add pine nuts or toasted breadcrumbs for extra crunch. The tart can be prepared ahead and refrigerated for up to 2 hours before baking.
