  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.
  2. In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Mix well and let it sit for 10 minutes to allow the juices to form.
  3. In another bowl, whisk together the flour, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs. Stir in the milk until just combined.
  4. Pour the peach mixture into the prepared baking dish. Drop spoonfuls of the cobbler topping over the peaches, spreading it out evenly.
  5. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  6. Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Use ripe but firm peaches for the best texture and flavor. For a lighter version, substitute butter with coconut oil or plant-based margarine. You can prepare the peach filling and cobbler topping a day ahead and store them in the refrigerator.
