  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1 cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and half of the chili powder. Cook chicken for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, add diced onion and bell pepper. Cook for 3-4 minutes until softened. Add garlic and remaining spices, cooking for another minute until fragrant.
  3. Pour in chicken broth, scraping any browned bits from the bottom of the pan. Return chicken to the skillet, reduce heat to medium-low, cover, and simmer for 10-12 minutes until chicken is cooked through.
  4. Remove chicken from skillet again. Add cheeses and sour cream to the sauce, stirring constantly until cheese is melted and sauce is creamy. Return chicken to pan, spooning sauce over the top.
  5. Serve immediately garnished with fresh cilantro.

Notes

For the creamiest cheese sauce, remove the skillet from heat before adding cheese and sour cream. Recipe adapts well - use chicken thighs for extra tenderness, or add jalapeƱo for spicier version.
