- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the trimmed green beans with olive oil, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes if using. Toss everything together until the beans are evenly coated.
- Spread the green beans in a single layer on your prepared baking sheet, ensuring even cooking and maximum crispiness.
- Roast for 12-15 minutes, then remove from oven and sprinkle the grated Parmesan cheese evenly over the green beans.
- Return to the oven for another 5-7 minutes, or until the cheese is melted and golden brown, and the beans are tender-crisp with slightly charred edges.
- Remove from oven and immediately squeeze fresh lemon juice over the top. Serve hot.
Notes
Use fresh green beans (not frozen) for best crispiness. Don't overcrowd the baking sheet - use two sheets if needed for even roasting. Add nutritional yeast with Parmesan for extra umami flavor. Reheat leftovers in oven to maintain crispiness (not microwave).
