- Preheat your oven to 375°F (190°C). Pat the pork dry with paper towels and season all sides with salt and pepper.
- In a small bowl, whisk together maple syrup, both mustards, minced garlic, olive oil, thyme, and apple cider vinegar until well combined.
- Place the pork in a roasting pan or oven-safe skillet. Brush about half of the glaze mixture over the entire surface of the pork.
- Roast for 20 minutes, then brush with more glaze. Continue roasting until the internal temperature reaches 145°F (63°C), about 45-60 minutes total depending on size.
- Remove from oven and let rest for 10 minutes before slicing. This resting period allows the juices to redistribute throughout the meat.
- While the pork rests, heat the remaining glaze in a small saucepan until slightly thickened, then drizzle over the sliced pork before serving.

Bring pork to room temperature for 30 minutes before roasting for tender results. Don't skip the resting step - it's crucial for juicy meat. For more flavor, marinate the pork in half the glaze for 2-4 hours before cooking.
