  • 2 cups cooked shredded chicken (from rotisserie chicken or boiled breast)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup Buffalo sauce (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, sliced
  • Tortilla chips, celery sticks, or carrot sticks for serving

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine the softened cream cheese, ranch dressing, and Buffalo sauce. Mix until smooth and well combined.
  2. Stir in the shredded chicken, 3/4 cup of the cheddar cheese, and all of the mozzarella cheese. If using blue cheese, add it now. Mix until all ingredients are evenly distributed.
  3. Transfer the mixture to an oven-safe baking dish. Sprinkle the remaining 1/4 cup cheddar cheese over the top. Bake for 20-25 minutes, or until the dip is bubbly and the cheese is golden brown.
  4. Remove from oven and let cool for 5 minutes. Garnish with sliced green onions and serve warm with your choice of dippers.

Notes

Make ahead tip: Prepare dip up to 24 hours in advance and refrigerate. Adjust Buffalo sauce for desired spice level - start with 1/3 cup for milder heat or up to 3/4 cup for extra spicy. Can also be made in slow cooker on low for 2-3 hours.
