- Preheat your oven to 350°F (175°C). In a medium bowl, combine the softened cream cheese, ranch dressing, and Buffalo sauce. Mix until smooth and well combined.
- Stir in the shredded chicken, 3/4 cup of the cheddar cheese, and all of the mozzarella cheese. If using blue cheese, add it now. Mix until all ingredients are evenly distributed.
- Transfer the mixture to an oven-safe baking dish. Sprinkle the remaining 1/4 cup cheddar cheese over the top. Bake for 20-25 minutes, or until the dip is bubbly and the cheese is golden brown.
- Remove from oven and let cool for 5 minutes. Garnish with sliced green onions and serve warm with your choice of dippers.
Notes
Make ahead tip: Prepare dip up to 24 hours in advance and refrigerate. Adjust Buffalo sauce for desired spice level - start with 1/3 cup for milder heat or up to 3/4 cup for extra spicy. Can also be made in slow cooker on low for 2-3 hours.
