- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, vanilla extract, and lemon juice. Mix well and pour the mixture into the prepared baking dish.
- In another bowl, mix the flour, rolled oats, brown sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the peach mixture.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
- Allow the cobbler to cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
