  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, vanilla extract, and lemon juice. Mix well and pour the mixture into the prepared baking dish.
  3. In another bowl, mix the flour, rolled oats, brown sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Sprinkle the crumble topping evenly over the peach mixture.
  5. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
