Ingredients

Ingredients
  • 2 cups fresh strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • Optional: 2 tablespoons sliced almonds for crunch

Method

Instructions
  1. Prepare the vegetables by washing and slicing the strawberries and cucumber. For best results, use an English cucumber as it has fewer seeds and thinner skin.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to create the dressing. Taste and adjust seasoning if needed.
  3. In a large mixing bowl, combine the sliced strawberries, cucumber, and chopped herbs. Gently toss to combine.
  4. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Sprinkle the crumbled feta cheese over the top just before serving to maintain its texture.
  6. If using, add the sliced almonds for extra crunch and serve immediately.

Notes

Choose ripe but firm strawberries that will hold their shape when sliced. Keep dressing separate and toss just before serving to prevent ingredients from becoming soggy. The combination of mint and basil creates wonderful herbal complexity.
