Instructions
- Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface and transfer it to a baking sheet lined with parchment paper. Use a fork to prick the pastry all over to prevent it from puffing up too much during baking.
- In a small bowl, mix the ricotta cheese, Parmesan cheese, minced garlic, chopped basil, and thyme. Spread this mixture evenly over the puff pastry, leaving a small border around the edges.
- Layer the thinly sliced tomatoes on top of the cheese mixture, overlapping slightly. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are tender. If desired, drizzle with honey before serving for an extra touch of sweetness.
Notes
Choose ripe but firm tomatoes for the best flavor and texture. Pat the tomato slices dry with a paper towel before arranging them on the tart to prevent a soggy crust. Sprinkle some red pepper flakes for a hint of spice or add crumbled feta cheese for a tangy twist. This tart is delicious served warm or at room temperature.
